Fresh fruit and veggie season is upon us and if you are like me, you could probably use any tips out there for saving your fresh fruits and vegetables. 

Take Part has put together a great little slideshow on prolonging the life of your fruits and vegetables! I'll definitely start freezing lemon and lime juice in ice cube trays, keep my fruits separate from my veggies since veggies ripen faster when next to fruit, and line the bottom of my crisper drawer to absorb the moisture that ripens fruit faster.

Make Your Own Bagged Apple Slices

These are great for throwing in kids lunches or after sports but can get really expensive! Here is how to make your own:

What you will need:

  • Apples
  • Apple Corer and Slicer {not necessary but definitely makes it easier!}
  • Lemon {for every cup of water you will need 1 tablespoon of Lemon juice}
  • Water
  • Sandwich Baggies
  1. First wash and slice all your apples.
  2. Throw them into a bowl large enough that the water can cover them
  3. Fill the bowl with enough water to cover the apples. For every cup of water you will need 1 tablespoon of lemon juice.
  4. Let them soak for 5 minutes in the lemon water solution
  5. Bag them up while removing as much air as you can. Oxygen is what makes the apples brown!

Your sliced apples should keep without browning for up to one week when kept in the fridge!

Just take fresh herbs (either home-grown or store bought) and olive oil and freeze them into flavor cubes! Use regular ol' ice cube trays and whichever olive oil you prefer! Just add your pasta, chicken, shrimp or fish to the saute pan with one of these and you have a flavorful meal! 

What you will need:

  • Fresh Herbs (of choice)
  • Olive Oil
  • Ice Cube Tray

 


Step One:

Fill each section of the ice cube tray about 50-75% full with your fresh herbs of choice.  You can do a single herb, or mix if you like.

 

Step Two:

Next top each section with olive oil (repeat). (Or, if you don't like using too much olive oil, fill it halfway.)

Step Three:

Freeze (the cubes should set in 1-2 hours) and once they have set, pop them out of the ice cube tray and into a freezer bag. Then just grab cubes as needed!

This week Katie is showing you how to save time throughout the week by preparing some of your ingredients on Sunday evening (or whenever it's convenient for you)! In addition to meal preparation, Katie likes to keep fruits and veggies in the refrigerator at arms reach...washed, chopped and ready to eat! When you purchase prepared vegetables at the store they can be so expensive, so why not do it yourself right?! 

This is Katie's plan for the week: Have carrots, celery, peppers, cauliflower and grapes ready and waiting for her in the fridge. As you can see from the container above, she did all of her washing and chopping at the same time. Then just store the container in your fridge! This definitely promotes healthy eating throughout the week and for those that know me personally, I'm (mostly) about healthy living! Laughing

This week Katie has planned to make ChiliZuppa Toscana Soup and Crockpot Buffalo Chicken Wraps. Since she was already preparing her snack veggies, she decided to do her chopping for their weeknight meals as well. For Chili, she needed green peppers. For Zuppa Toscana, she needed Kale (show in baggies below), plus she is also making Kale Chips for a snack. For Buffalo Chicken Wraps she needed julienned carrots and celery.

The Kale needed to be soaked and chopped and then divided it for her 2 applications. After everything is washed and chopped, she just bagged it up and load it into the fridge! This “tip” not only saves you time throughout the week, but saves money because you won’t be tempted to eat out!
