No Bake Protein Bites Recipe

If you spend any amount of time on Pinterest, you may have come across these No Bake Protein Bites. Some of you may even wanted to make them but when you got to the store to buy the ingredients they were either nowhere to be found, or way too expensive. I'm not only going to show you how easy it is to make these, I will also tell you where I buy my ingredients. 

No Bake Protein Bite Ingredients

That photo right up there are your ingredients. All it takes are those 6 good for you items to make these yummy bites. Now even if you see something up there that frightens you, like the raw honey, relax because you can modify the ingredients any way you like. If this is the first time you've ever made this recipe, start out with the amounts given below. You don't want to go all willy-nilly and end up with a weird consistency by doubling the batch or something like that. 

No Bake Protein Bite Recipe

  • 1-cup rolled oats
  • 1/2 cup peanut butter (use 1/4 cup more if you are using organic natural peanut butter)
  • 1/2 cup flax meal
  • 1/2 cup Chia seeds
  • 1/3 cup honey (I used raw honey that has to be melted before I add it. You also have to use a bit more.)
  • 1/3 cup chocolate chips (you can modify this to how much chocolate you want. I'm ok with about 1 chocolate chip per protein bite.)

No Bake Protein Bites

This recipe consists of 3 steps. #1: Add measured ingredients to mixing bowl. #2: Wet hand with water and mix ingredients. #3: Create ball shapes by squishing the mix in your hand. (Rolling does not work very well.) 

Voila! You are done! Store these in an airtight container either in the fridge or out of the fridge. There are no ingredients that really spoil so you can definitely keep them out of the fridge. These are great for a quick and filling snack with a big glass of water - especially when traveling!

Rolled Oats (I flip flop between brands and availability. Just be sure to stick with the regular rolled oats, not the quick cooking kind.)

Mushroom Spinach Feta Frittata

I was horrible at making frittata's when I tried using a regular skillet to make them. It wasn't until I purchased the Cuisinart Frittata non-stick skillet that I mastered frittatas. This skillet definitely makes it easier to flip and remove, which is something that I could never get down with a regular skillet. 

I enjoy making frittatas because there are so many versions that can be whipped up with common ingredients that you will find in your fridge. And if you have some fresh veggies that need to be eaten, adding them to a frittata is the way to go.

Layered Brownie and Cheesecake Valentine's Day Dessert

Looking for an easy way to treat your family or friends this Valentine's Day that won't keep you in the kitchen too long? Try out this super simple, yet sinfully delicious Layered Brownie and Cheesecake with Strawberry Topping Valentine's Day Dessert

This dessert will make you look like you've spent all day in the kitchen baking away! Just be sure to put the boxes from the mix under something in the recycle bin. 

Wilton Spring Form Mini

I used these Wilton Mini Springform Pan sets from Amazon for only $9.09 (reg. $19.27). They were super simple to use and the brownie and cheesecake didn't budge when I removed the sides and bottom! 

I used a box mix for both the brownie mix and the cheesecake. For those of you who bake from scratch, I understand how this may seem like a sin, but I'm just not a baking kind of girl so I'll stick with my box mix. 

Directions:
Fill the springform pans halfway with the brownie mix and bake according to the box directions. I did check mine more than usual because I was afraid they would bake faster than the normal 9x13 pan. I allowed mine to cool completely before adding the cheesecake mix. I also took a butter knife and made sure the brownie was not sticking to the pan. Make the cheesecake mix according to the box directions and fill in the rest of the pan. Allow it to set for an hour in the fridge before removing it from the pan. I actually let mine sit in the fridge overnight. When you are ready to serve, remove it from the springform pan and add your strawberry topping. I used strawberry preserves.

Kids love this because they are individual desserts! Adding the topping at the last minute allows you to customize each dessert!

Mediterranean Chicken Skillet Recipe

This one dish Mediterranean Chicken Skillet meal is super easy to make and the ingredient list is nice and short - just the way I like my ingredient list to be! 

  • 3 chicken breast, cubed
  • 1 lb pasta, your choice
  • 1 16 oz package of sliced mushrooms, rinsed
  • 1 white onion, sliced 
  • 1 small package of sugar snap peas, rinsed
  • 1/2 jar of roasted red peppers, chopped
  • 1 cup of sun-dried tomates, julienne cut
  • 1 packet of McCormick Gourmet Garlic & White Wine Chicken Scaloppine
  • 2 tbs Olive Oil

Pick 'n Save Health Key System

Cook the pasta noodles according to package directions while working on the rest of the dish. In a large skillet (I used my cast iron braising pan), heat 1 tbs of olive oil and then add the cubed chicken. Once the chicken is coated with the olive oil, add half of the McCormick seasoing packet and stir to coat. Once the chicken is fully cooked, remove it and set aside. Be sure to leave the olive oil in the pan. Add the onion and saute until they are slighty translucent.

Add the mushrooms and sugar snap peas and cook for about 5 minutes, then cover for 2 - 3 minutes. Add the sun-dried tomatoes and roasted red peppers.

Add the chicken back in and mix well.

Once the pasta noodles are done, drain but do not rinse, and add them into your skillet. Drizzle 1 tbs of olive oil and the remaining McCormick Seasoning packet and mix well. 

This Mediterranean Chicken Skillet recipe is low in fat since only 2 tablespoons of olive oil are used, a good source of lean protien, low in salt because salt is not added to the dish, and has lots of veggies!

My husband really likes my Turkey Sausage Rice Stuffing with Cranberries recipes so I made it for a meal, and plan to make it again for Thanksgiving dinner! Everything you need to make this recipe can be found at Pick 'n Save. I decided to add the Roundy's All Natural Roasted Garlic & Mushroom Turkey Sausage to this recipe because it sounded like a great addition! 

Turkey Sausage Rice Stuffing with Cranberries Recipe

Ingredients:
2 cups Lundberg Country Wild Rice Blend
4 cups low-sodium chicken broth
3 tbsp olive oil
5 links raw sweet Italian Sausage
5 links Roundy's All Natural Roasted Garlic & Mushroom Turkey Sausage 
10 celery stalks, chopped
1 large yellow onion, chopped
16 oz container of sliced mushrooms
3/4 cup dried cranberries

Directions:

Cook rice according to package directions omitting the water and using the low-sodium chicken broth instead. This rice takes 45 minutes to cook so start that right away.

While rice is cooking, cook the fresh sweet Italian Turkey sausage in large heavy pan. I like to use my dutch oven because this recipe makes a huge amount and when stirring everything together, it doesn't spill over on to the stove.

Make sure you break the meat up into small pieces.

Once the sweet Italian turkey sausage is browned, add the Roundy's All Natural Roasted Garlic & Mushroom Turkey Sausage, casings removed. Break those into small pieces as well and mix together. The Roundy's sausage are already fully cooked. Remove from dutch oven or large skillet and place in a bowl.

Add the 3 tbsp of olive oil to the same pan and add the onion. Saute it until lightly browned and then add the celery. Cook the celery for about 10 minutes until it is softened. 

Add the mushrooms to the same pan and cook for about 5 minutes while stirring.

Cover your skillet or dutch oven and let it sit for about 3 - 4 minutes until the mushrooms have a shrunk a little. Then, add the turkey sausage mixture and rice and mix well. The final step is adding the cranberries while the heat is still on. This will soften them a bit.

I have made the recipe ahead of time for Thanksgiving dinner so there was less for me to do the day of. It will only need to be heated through so it's a great side dish to have prepared ahead of time. Pick 'n Save is now social!

Halloween Party Idea Dirt Cake Graveyard

Here is a super fun Halloween Party Idea that everyone will love - a Dirt Cake Graveyard! 

I was able to find all of the props at either Walmart or Michael's Craft Store. I used a basic dirt cake recipe and Milano cookies. For the writing on the graves (Milano cookies) I used the Wilton Black Sparkle Gel from Walmart. I also found the Wilton Gummy Mummy Cupcake Toppers and the Wilton Ghost and Candy Corn Cupcake Toppers at Walmart. The Monster Finger Puppets are from Michael's and are the only items on this Dirt Cake Graveyard that are not edible. But I'm thinking the kids will still have a great time playing with them! Use a dab of frosting on the edges of the monster puppets to attach to the pumpkins.

I really like the monster finger puppets coming out of the dirt! I think it gives this Dirt Cake Graveyard an extra added spooky effect! I'm sure the kids will love it also and I can't wait to bring this to the Halloween party we were invited to!
